Prerequisite: AGR 114 or FCN 104 or permission. Study of the composition of milk, cheese, ice cream and other dairy products. A survey of manufacturing processes for a variety of dairy products, current and historical recap of dairy policy, dairy price support, trade and regulations. Fall-Even
