	Description
		
			Prerequisite: major or minor in Nutrition and DieteticsÂor Hotel and Restaurant Management program. Basic principles in selection and preparation of food products based on chemical and physical properties of food. The safety of the food supply is also investigated. Lecture three hours per week, laboratory two hours per week. Materials fee required. Fall
